Ingredients

 
1 cup bulgur
 
4 tablespoons minced fresh mint
 
2 cups fresh peas or package frozen peas
 
3 scallions, sliced
 
1 tablespoon freshly squeezed lemon juice
 
1/2 cup toasted sliced almonds
 
Freshly ground black pepper to taste
 
1 tablespoon chopped fresh basil
 
1/4 cup minced fresh parsley
 
1 cup plain, low fat yogurt

Directions

Cover bulgur with boiling water and allow to stand for 25 minutes.
Drain thoroughly, squeezing out additional water with hands.
Cook fresh peas in boiling water for 1 minute; drain or defrost frozen peas but do not cook.
Combine peas with bulgur and remaining ingredients except for yogurt.
Then stir in yogurt to coat thoroughly.
