Minted Spinach Dip Recipe
Ingredients
| Cottage cheese | 1 Cup (16 tbs) | |
| Frozen chopped spinach | 1/2 Cup (16 tbs), blanched | |
| 1/4 cup plain low-fat yogurt or reduced-fat sour cream | ||
| 1/4 cup minced fresh mint or 1/4 cup minced parsley mixed with 1 teaspoon dried mint | ||
| 1 green onion, white part only, chopped (1 tablespoon) | ||
| Garlic | 1 Clove (5gm), minced | |
| 1/4 teaspoon grated lemon rind | ||
| Salt | 1/4 Teaspoon | |
| Red cayenne pepper | 1/8 Teaspoon | |
Directions
1 In a food processor or blender, whirl all the ingredients for 30 to 45 seconds or until smooth.
Transfer the dip to a small bowl, cover, and chill until ready to serve
