Ingredients

 
1 cup low-fat (1% milk fat) cottage cheese
 
1/2 cup chopped fresh spinach (4 ounces), blanched and drained, or 2 1/2 ounces frozen chopped spinach, thawed and squeezed dry
 
1/4 cup plain low-fat yogurt or reduced-fat sour cream
 
1/4 cup minced fresh mint or 1/4 cup minced parsley mixed with 1 teaspoon dried mint
 
1 green onion, white part only, chopped (1 tablespoon)
 
1 clove garlic, minced
 
1/4 teaspoon grated lemon rind
 
1/4 teaspoon salt
 
1/8 teaspoon ground red pepper (cayenne)

Directions

1 In a food processor or blender, whirl all the ingredients for 30 to 45 seconds or until smooth.
Transfer the dip to a small bowl, cover, and chill until ready to serve
