Minted Peas With Orange Recipe
Minted peas with orange is a fruited green peas recipe. Flavored with fresh mint or mint flakes, the minted peas recipe is light and delicious. Served as a side in meals of choice, it is quite flavorful.
Ingredients
2 cups fresh green peas or 1 1/3 10 ounce packages frozen green peas
2 teaspoons unsalted margarine
2 teaspoons grated orange rind
1 tablespoon minced fresh mint or 1/2 teaspoon mint flakes
1/8 teaspoon black pepper
Directions
In a small saucepan, bring an inch of unsalted water to a boil; add the peas and cook, covered, for 5 minutes or until tender.
Drain, transfer to a bowl, and set aside.
Using the same saucepan, melt the margarine over moderately low heat; add the orange rind and cook, uncovered, stirring, for 1 minute.
Add the mint, pepper, and peas; cook and stir for 2 minutes or until heated through.
