Minted Pears and Lamb Recipe
Ingredients
| 6 lamb shoulder chops (about 3/4 inch thick) | ||
| Pear | 1 Can (10oz), drained | |
| Butter margarine | 1/4 Cup (16 tbs), melted | |
| Juice of 1 large lemon | ||
| Mint leaves | 1/2 Teaspoon, dried | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Diagonally slash outer edge of fat on lamb at 1-inch intervals to prevent curling.
Set oven control to broil and/or 550°.
Place lamb on rack in broiler pan.
Broil with tops 2 to 3 inches from heat until brown, about 6 minutes.
Sprinkle with salt and pepper; turn.
Broil until done, 5 to 7 minutes longer.
About 2 minutes before lamb is done, arrange pear halves, cut sides up, around lamb.
Mix margarine, lemon juice and mint; brush over pears.
Heat remaining margarine mixture; serve with lamb.
Fill pears with mint jelly if desired.
