Minted Pea Salad Recipe
Ingredients
| Cucumber - 1 medium-sized, peeled | ||
| Peas package | 2 , frozen | |
| Mint - 3 tablespoons, fresh, finely chopped OR mint leaves - 1/2 teaspoon, crushed | ||
| Lime or lemon juice - 1 tablespoon | ||
| Mayonnaise | 1/3 Cup (16 tbs) | |
| Honey | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Lettuce leaves | ||
Directions
GETTING READY
1) Wash the cucumber and cut in half lengthwise.
2) Scoop out the cucumber and remove the seeds.
3) Chop the cucumber and mint. Keep them aside.
MAKING
4) Take a bowl and mix the chopped cucumber with peas and chopped mint.
5) Take another bowl and mix the lime juice, mayonnaise, honey and salt.
6) Pour the dressing over the peas-cucumber and mix them well.
SERVING
7) Garnish the salad with mint sprigs.
8) Serve the salad over the lettuce leaves.
