Minted Melon Salad Recipe

Ingredients
2 envelopes unflavored gelatin
1/4 cup cold water
1 cup sugar
1 cup water
1/3 cup finely chopped fresh mint
1 1/2 cups orange juice
1/3 cup lemon juice
Dash of salt
1 1/2 to 2 cups melon balls (one kind of melon or an assortment)
Lettuce leaves
Mayonnaise
Directions
Soften gelatin in the 1/4 cup cold water about 5 minutes.
Combine sugar and 1 cup water, and boil for 5 minutes; remove from heat.
Dissolve softened gelatin in this hot syrup; add mint; cool to room temperature.
Strain this mixture through a fine wire strainer (discard mint); then add orange juice, lemon juice, and salt; chill.
When slightly thickened, fold in melon balls.
Turn into individual molds or a 1-quart ring mold; chill until firm.
Unmold on crisp lettuce.
