Ingredients

 1 small head red leaf lettuce, separated into leaves, rinsed, and crisped
 Butter/Margarine2 Tablespoon
 1 package 10 oz. frozen tiny peas, thawed
 1/4 cup chopped fresh mint or 1 1/2 tablespoons dry mint
 Lemon peel2 Teaspoon, grated
 Salt To Taste
 Pepper To Taste

Directions

Set aside 6 large lettuce leaves; cut remaining lettuce into thin strips.
Melt butter in a wide frying pan over medium-high heat.
Add peas and lettuce strips; cook, stirring, until lettuce is wilted about 2 minutes.
Stir in mint and lemon peel.
Season to taste with salt and pepper.
To serve, place a whole lettuce leaf on each of 6 plates.
Spoon pea mixture equally into center of each leaf.
