Ingredients

 2 nectarines, pitted and sliced
 2 plums, pitted and quartered
 Water1 Cup (16 tbs)
 3/4 cup halved red or green seedless grapes
 Quick-cooking tapioca2 Tablespoon
 Apple juice concentrate2 Tablespoon, frozen
 Honey1 Teaspoon
 Mint leaves1/2 Teaspoon, dried

Directions

In 2-quart casserole, combine all ingredients.
Microwave at High for 14 to 21 minutes, or until tapioca is tender and translucent, stirring twice.
Chill for at least 3 hours.
Serve cool.
