Mint Glazed Lamb Recipe

Ingredients

 
4 to 5 pound leg of lamb
 
3 cloves garlic
 
1 teaspoon crushed rosemary
 
1/4 teaspoon pepper
 
1/2 cup mint jelly
 
1 can (8 1/2 oz.) pear slices, drained and mashed; reserve
 
1 tablespoon syrup

Directions

Make 6 slits in lamb, insert 1/3 clove garlic in each.
Mix rosemary and pepper; rub over lamb.
Place lamb on microwave roasting rack set in 12x8-inch dish.
In small glass bowl, combine remaining garlic, finely chopped, jelly and reserved syrup.
Cook at MEDIUM 2 to 3 minutes or until melted.
Stir in pears.
Spoon 1/3 mint glaze over lamb.
TO COOK BY TEMPERATURE: Insert temperature probe into meaty portion of lamb not touching bone.

When temperature in display reaches 100°F, remove probe from meat without disconnecting from oven wall.
Turn roast over and reinsert probe.
Brush with remaining mint glaze.
Drain liquid occasionally.
Continue cooking until meat reaches selected temperature.
