Mint Dressed Spinach Apple Toss Recipe
Ingredients
| Powdered fruit pectin package | 1 1 3/4 Ounce | |
| Salt | 1/8 Teaspoon | |
| 1 cup unsweetened pineapple juice | ||
| Lemon juice | 2 Tablespoon | |
| Sugar | 2 Teaspoon | |
| 1 tablespoon sliced green onion | ||
| 1 tablespoon chopped fresh mint or 1/2 teaspoon dried mint, crushed | ||
| Spinach | 10 Ounce | |
| Apples | 2 Medium, cored | |
| Cucumber | 1 Small, thinly sliced | |
| Radishes | 1/3 Cup (16 tbs), sliced | |
Directions
In small bowl combine powdered pectin and salt.
Stir in pineapple juice, lemon juice, and sugar; add onion and mint.
Cover; refrigerate at least 1 hour.
In large bowl combine torn spinach, cubed apple, sliced cucumber, and sliced radishes.
Pour 1/3 cup of the dressing over salad and toss to coat. (Refrigerate remaining dressing.)
