 Powdered fruit pectin package1 1 3/4 Ounce
 Salt1/8 Teaspoon
 1 cup unsweetened pineapple juice
 Lemon juice2 Tablespoon
 Sugar2 Teaspoon
 1 tablespoon sliced green onion
 1 tablespoon chopped fresh mint or 1/2 teaspoon dried mint, crushed
 Spinach10 Ounce
 Apples2 Medium, cored
 Cucumber1 Small, thinly sliced
 Radishes1/3 Cup (16 tbs), sliced

Directions

In small bowl combine powdered pectin and salt.
Stir in pineapple juice, lemon juice, and sugar; add onion and mint.
Cover; refrigerate at least 1 hour.
In large bowl combine torn spinach, cubed apple, sliced cucumber, and sliced radishes.
Pour 1/3 cup of the dressing over salad and toss to coat. (Refrigerate remaining dressing.)
