Miniature Orange Muffins Recipe

These miniature orange muffins have the tang of orange along with the crunchiness of the nuts hidden in them. baked with raisins, sugar and sour cream, these little muffins are a great treat anytime. Serve them as such or with an orange dip, it is sure to please everyone, especially kids!

Ingredients

 
2 cups all-purpose flour 500 ml
 
l tsp baking soda 5mL
 
l tsp salt 5mL
 
l tsp grated orange zest 5mL
 
1/2 cup butter, at room temperature 125 mL
 
1 cup granulated sugar 250 mL
 
3/4 cup sour cream 175 mL
 
1/2 cup raisins 125 mL
 
1/2 cup chopped nuts 125 mL
 
DIP:
 
1 cup granulated sugar 250 mL
 
1/2 cup orange juice(juice of 1 orange) 125 mL

Directions

In a large bowl, combine flour, baking soda, salt and zest.
In another bowl, cream together butter and the 1 cup (250 mL) sugar.
Add sour cream alternately with flour mixture, stirring just until moistened and blended.
Fold in raisins and nuts.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 12 to 15 minutes.
In a small bowl, mix together sugar and orange juice.
Dip warm muffins into dip mixture.
Let cool before serving.
