Miniature Blueberry Muffins Recipe

Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup fresh or frozen blueberries, thawed and patted dry
3/4 cup skim milk
1/3 cup sugar
1/4 cup vegetable oil
1 egg
1 teaspoon grated orange rind
1 teaspoon vanilla extract
Directions
Combine first 4 ingredients in a large bowl.
Add blueberries, and toss gently to coat.
Combine milk, sugar, oil, egg, orange rind, and vanilla; add to dry ingredients, stirring just until moistened.
Spoon batter into paper lined miniature muffin pans, allowing 1 tablespoon barter per muffin.
Bake at 400° for 20 minutes or until golden brown.
