Miniature Pumpkin Muffins Recipe
|Sifted all-purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs) (plus more for sprinkling)|

|Cooked pumpkin||1⁄2 Cup (8 tbs), or canned|
|Milk||1⁄2 Cup (8 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|

Cut in shortening until quite fine.
Combine egg, pumpkin, and milk; add to flour mixture and mix just until dry ingredients are moistened.
Add the seedless raisins.
Fill 1 3/4-inch or 2 1/2-inch greased muffin pans 2/3 full.
Sprinkle sugar over each muffin.
Bake in hot oven (400°) 15 to 20 minutes for small size, and about 25 minutes for medium.
