Ingredients
1 cup golden raisins
1 cup chopped dried prunes
1 cup mixed dried fruit
1 cup chopped walnuts
1/2 cup sifted whole wheat pastry flour
4 eggs
1/2 cup honey
1 1/2 teaspoons vanilla extract
1/2 cup sifted unbleached white flour
Directions
Preheat oven to 325 °F.
In a large bowl, mix together raisins, prunes, mixed fruit, and walnuts.
Toss with whole wheat pastry flour.
In a medium-size bowl, beat eggs and honey.
Add vanilla extract.
Beat in unbleached white flour.
Pour into bowl with fruit, and mix well.
Turn batter into a 12-cup nonstick muffin tin.
(Cups will be almost full.) Bake on middle shelf of oven for about 35 minutes, or until golden.
Turn out onto wire racks to cool.
