| Onion/2 small onions | 1 Large, chopped | |
| Minced cremini mushrooms | 1 Cup (16 tbs) | |
| Parsley | 1⁄2 Cup (8 tbs), chopped | |
| Salsa | 1 Cup (16 tbs) | |
| Tomato sauce | 1⁄2 Cup (8 tbs) | |
| Rolled oats | 3⁄4 Cup (12 tbs) | |
| Egg | 1 | |
| Garlic powder | 2 Teaspoon | |
| Dried thyme | 1 Teaspoon | |
| Salt | To Taste | |
| Parsley | 1 Tablespoon, chopped (For Garnish) |

Directions
1. Combine all ingredients, except tomato sauce in a large bowl.
2. Free form 4 mini meatloaves and place on a baking sheet. Top each one with 2 tbsp of tomato sauce.
3. Bake for 30 minutes.
4. Remove from oven and plate it.
5. Garnish it with chopped parsley and serve it with sauteed vegetables.
