Mini Cheesecakes Recipe

mini cheesecakes are special little muffins baked with cream cheese and vanilla wafers in small cup. Topped with goodies like jam, nuts and chocolate curls, these muffins are a huge hit with kids and can be served at children's parties.

Ingredients

 2 pkgs (8 oz [250 g] each)softened cream cheese
 Granulated Sugar1/2 Cup (16 tbs)
 L tsp vanilla 5mL
 Eggs2 Small
 Vanilla wafers12
 Jam, nuts, chocolate curls etc.

Directions

In a large mixer bowl, combine cheese, sugar and vanilla.
Blend on medium speed until smooth.
Add eggs, blending well.
Put 1 vanilla wafer in each cup.
Spoon cheese mixture over wafers, filling cups three-quarters full.
Bake in preheated oven for 25 minutes at 160C
Set aside to cool.
Remove from tin and chill in refrigerator before serving.
Top with whatever you like.
VARIATION: For a special flavor, use 1/2 tsp (2 mL) rum or almond flavoring in place of the vanilla.
