Ingredients

 
2 eggs, room temperature
 
1 cup sugar
 
1/2 cup vegetable oil
 
1/4 cup buttermilk
 
1/2 tsp vanilla extract
 
2 cups grated peeled caroots (about 1.5 lbs)
 
1/2 cup raisins
 
1.5 cups all purpose flour
 
1 tsp baking powder
 
1/2 tsp baking soda
 
1 tsp cinnamon
 
1/4 tsp salt

Directions

combine eggs, sugar, oil, buttermilk and vanilla extract and beat with
a paddle attachment on a mixer or by hand until well combined

Sift together flour, baking powder, soda, cinnamon and salt.
Add 3/4 of flour mixture, in batches, to oil mixture stirring to combine.
Add carrots and raisins to remaining flour and toss to coat. Fold in carrots and rasins,
into batter. Combine well. Line mini muffin pans with mini baking liners and add 2 tsp
to each muffin paper. Bake for 10-12 mins at 350 F. Cool completely before frosting

Doesnt carrot cake have lots of spices or is it just the cinnamon as you suggest? I love carrot cake, and I recently had these cupcake style carrot cake at a party ..I really liked it, and want to try it myself. The host mentioned she put like a tonne of spices into the cake.
