Mini Banana Date Nut Muffins Recipe
Ingredients
2 cups all purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe bananas, about 2 large bananas
8 tablespoons butter, melted and cooled
2 large eggs, at room temperature
1/3 cup buttermilk, at room temperature
1 1/2 teaspoons vanilla extract
1 cup chopped dates
1 cup chopped walnuts
Directions
Heat the oven to 375 degrees.
Lightly butter twenty four 1 3/4 by 7/8 inch (2 tablespoon) muffin cups.
Stir together the flour, sugars, baking powder, baking soda and salt.
In another bowl combine the bananas, butter, eggs, buttermilk and vanilla. (The mixture will look curdled.)
Make a well in the center of the dry ingredients, add the banana mixture and stir just to combine.
Stir in the dates and walnuts.
Spoon the batter into the prepared muffin cups.
Bake for 20 to 25 minutes until a toothpick inserted in the center of one muffin comes out clean.
Remove the tin(s) to a wire rack and cool for 5 minutes before removing the muffins from the cups.
Finish cooling on the rack and serve warm or completely cool.
