Moroccan Mini Shrimp Bastila Recipe Video
|Bean threads||2 Small, rolled (chinese vermicelli)|
|Dried porcini mushroom/Dried black mushrooms||1 Ounce|

1 In a bowl, put the mushrooms and pour hot water over them.
2 Allow the mushrooms to sit for 10-15 minutes or until they become soft.
3 Meanwhile, grate the tomato.
4 Slice the scallions as shown in the video.
5 Mince the garlic cloves.
6 Preheat the oven to 400 degrees F.
7 Brush a baking dish with melted butter and cover with parchment paper.
8 In a pan bring some water to a boil and add the bay leaves in it along with the shrimp.
9 While the shrimp is cooking, drain the mushrooms, reserving the water and cut them into small pieces.
10 Once the shrimp are pink, remove them from the water and transfer to a bowl.
11 Clean the shrimp from shells and cut them into small pieces.
12 In a pan, combine one cup water in which the mushrooms were soaked along with the water in which the shrimp were boiled.
13 Bring this mixture to a boiling point and add in the Chinese vermicelli ( bean threads).
14 Cook the vermicelli for about 5 minutes and drain the water.
15 Using scissors cut the vermicelli into small pieces.
16 In a pan, drizzle olive oil over medium heat.
17 Add in the tomato and spices, let cook for 2-3 minutes.
18 Add in the mushrooms and cilantro, cook, stirring for a few minutes.
19 At this stage, add the shrimp and Chinese vermicelli.
20 Correct the seasoning as per your taste.
21 Transfer the mixture to a bowl and allow to cool.
22 In a pan melt the butter.
23 In a bowl, beat the egg.
24 Cover the spring roll pastry with a damp cloth to avoid drying up.
25 Use a small circular dish to shape the Bastila.
26 Brush the pastry with melted butter and then add the filling.
27 Cover with cheese.
28 Shape the Bastila as shown in the video and brush with an egg.
29 On the preapared baking dish, place 2 pastries in each side of the dish and brush them with melted butter.
30 Place a sheet in the center and brush with butter.
31 Add filling in the center and cheese on top.
32 Bring each side of the pastry to the center and brush with egg.
33 Add one more pastry on top, and brush with butter.
34 Turn over plate and brush the bottom with egg.
35 Place mini Bastila on baking sheet and brush the top with egg.
36 Place it in the oven.
37 Bastila is done when the surface is golden brown.
38 Serve immediately.
