Mini Pizzas Recipe
Ingredients
6 slices whole-wheat or white bread
1 tablespoon olive oil
1 clove garlic, crushed
2 medium-size plum tomatoes, cut crosswise into 12 slices
2 tablespoons minced fresh basil or 2 teaspoons dried basil, crumbled
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon each salt and black pepper, or to taste
1 cup shredded part-skim mozzarella cheese (4 ounces)
1 tablespoon grated Parmesan cheese
Sprigs fresh thyme, oregano, or parsley (optional garnish)
Directions
1 Preheat the oven to 425° F.
Usinga 2-inch biscuit cutter or small glass, cut 2 rounds from each slice of bread.
With a rolling pin, gently flatten the rounds.
In a small bowl, combine the oil and garlic.
Usinga pastry brush, coat each bread round with a little of the mixture.
Arrange the rounds on a baking sheet and bake for 5 minutes or until slightly crisp.
2 On each round of bread, layera slice of tomato, a sprinklingof basil,oregano, salt and pepper, a heaping tablespoon of mozzarella cheese, and 1/4 teaspoon Parmesan cheese.
Bake the mini pizzas for 7 to 10 minutes or until the mozzarella cheese is melted.
Transfer the pizzas to a serving dish and garnish with sprigs of fresh herbs if desired.
