Mini Pitas With Curried Chicken Recipe
Ingredients
| Light mayonnaise | 1/3 Cup (16 tbs) | |
| Mango chutney | 2 Tablespoon | |
| Curry powder | 1 Teaspoon | |
| Cooked chicken | 1 1/2 Cup (16 tbs), finley diced | |
| Apple | 1/2 Cup (16 tbs) | |
| Radishes | 1/3 Cup (16 tbs), finley diced | |
| 2 tbsp finely chopped green onions | ||
| Salt | To Taste | |
| 10 mini pitas (3-inch [8 cm] size) | ||
| Red leaf or Boston lettuce | ||
Directions
1. In a bowl, blend mayonnaise, chutney and curry powder until smooth. Stir in chicken, apple, radishes and green onions; season with salt to taste.
2. Cut pitas in half to make pockets. Line each pocket with lettuce; spoon in chicken mixture. Arrange on serving plate.
