Mini Pineapple Meat Loaves Recipe
|Canned crushed pineapple||15 1⁄4 Ounce, juice pack (1 Can)|
|Soft bread crumbs||1 1⁄2 Cup (24 tbs)|
|Chopped onion||2 Tablespoon|
|Chopped green pepper||2 Tablespoon|
|Ground beef||1 1⁄2 Pound|
|Prepared mustard||2 Teaspoon|
|Catsup||1⁄4 Cup (4 tbs)|
|Soy sauce||2 Tablespoon|
|Bottled hot pepper sauce||4 Drop|

Add water to juice, if necessary, to make 1 cup; set aside for use in sauce.
In bowl combine eggs, bread crumbs, pineapple, onion, green pepper, salt, and pepper.
Add beef; mix well.
Form into five 4x2-inch loaves.
Place meat loaves in wire grill basket.
Grill over medium-hot coals for 20 to 25 minutes.
Turn and grill till done, about 20 minutes more.
Meanwhile, in small saucepan blend together cornstarch and mustard.
Stir in reserved pineapple juice, catsup, soy sauce, and hot pepper sauce.
Cook over medium-hot coals, stirring constantly, till thickened and bubbly.
Pass with the meat loaves.
