Mini Mexican Meatballs Recipe
Ingredients
| 1 envelope Lipton Recipe Secrets Onion or Beefy Onion Soup Mix | ||
| Ground beef | 1 1/2 Pound | |
| Egg | 1 | |
| Cornmeal | 1 Tablespoon | |
| Green chilies | 1 Can (10oz), undrained | |
| Whole peeled tomatoes | 1 Can (10oz), undrained | |
| Ground cumin | 1 Teaspoon | |
Directions
In medium bowl, combine onion soup mix, ground beef, egg, cornmeal and 1 tablespoon chilies; shape into 1-inch meatballs.
In 12-inch skillet, brown meatballs over medium-high heat; drain.
Add tomatoes, remaining chilies and cumin.
Bring to a boil over high heat; cook 1 minute.
Reduce heat to low and simmer covered 8 minutes or until meatballs are done.
