GETTING READY
1 Preheat the oven to 350 degrees F.
2 In a baking tin, place the muffin cups with one vanilla wafer in the bottom of each cup (flat side down)
MAKING
3 In a bowl, mix cream cheese together until smooth.
4 Add in the sugar, vanilla and lemon juice, continue mixing.
5 Gently scrape the sides and add in the eggs.
6 Mix well to combine all the ingredients well.
7 Fill the prepared muffin cups with the mixture.
8 Bake for 15 - 20 minutes or until the centers are almost set.
9 Allow to cool for 30 minutes.
10 Place in the refrigerator for about 2 hours or overnight.
SERVING
11 Serve topped with pie filling, fresh/ canned fruit or whipped cream.
