Minestrone Soup Recipe
Ingredients
| Cabbage | 115 Gram (For 4) | |
| Tomatoes | 115 Gram (For 4) | |
| Onions | 115 Gram (For 4) | |
| Carrots | 115 Gram (For 4) | |
| Turnip | 30 Gram (For 4) | |
| Leeks | 30 Gram (For 4) | |
| Celery | 10 Gram (For 4) | |
| Parsley sprigs | 1 (For 4) | |
| Macaroni | 55 Gram (For 4) | |
| Cheese | 30 Gram (For 4) | |
| Garlic | 10 Gram (For 4) | |
| Salt | 10 Gram (For 4) | |
| Pepper | 1 (For 4) | |
| Stock | 1 Liter (For 4) | |
| Oil | 15 Milliliter (For 4) |
Directions
1. Wash and dice into small pieces all the vegetables. Blanch tomatoes.
2. Mince onion and garlic.
3. Chop parsley.
4. Heat fat. Fry minced onion, garlic, parsley, carrots and turnip.
5. Add leeks, salt, pepper, blanched tomatoes, cabbage and celery. Add stock.
6. Bring to boiling point. Add macaroni cut into 1.25 cm. (1/2") pieces.
7. Simmer on slow fire till vegetables and macaroni are cooked.
8. Serve hot garnished with grated cheese.
