Vegetable stock 2 litre
 
Tomatoes 500 gms
 
Garlic 50 gms

Green peas 30 gms
 
Zucchini 30 gms
 
Potatoes 30 gms
 
Carrots 30 gms
 
Cauliflower 30 gms
 
Fresh beans 20 gms
 
White beans 20 gms
 
Onions 20 gms
 
Garlic 10 gms
 
Tomato 100 gms
 
Rosemary 2 gms
 
Oil 30 ml
 
Tomato puree 60 ml
 
Pasta macaroni 30 gms
 
Parmesan cheese 30 gms
 
Cabbage 30 gms
 
Salt to taste

Directions

In a pan heat some oil and saute garlic and onion.
Once they are evenly browned, add bay leaf & peppers and let the aromas release.
Now put in the chopped tomatoes and stir fry.
Once cooked, add salt & sugar and the stock, achieving a thick tomato puree.
Strain the puree and heat the strained liquid on slow fire.
Saute garlic and onions, when translucent add all vegetables and beans except cabbage, french beans & pasta.
Saute for 2-3 minutes and add rosemary.
Now, pour in the tomato stock and bring to boil.
Add cabbage & french beans, tomatoes seasoning, tomato puree, pasta and simmer Add seasoning, salt and pepper to your taste.
Pour in soup bowls and top with grated parmesan cheese.
