Minestrone Alla Romana Recipe
Ingredients
| Olive oil | 1 Tablespoon | |
| 1/4 cup minced salt pork | ||
| Onion | 1 , minced | |
| Garlic | 1 Clove (5gm), minced | |
| Stalk celery | 1 , minced | |
| 2 fresh tomatoes, peeled and cut into pieces, or 2 large canned tomatoes | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Ground sage | 1/4 Teaspoon | |
| 4 cups hot water or bouillon | ||
| 2 cups cooked dried white beans | ||
| Elbow macaroni | 1 Cup (16 tbs) | |
| Grated Parmesan or Romano cheese | ||
Directions
Heat oil in deep kettle.
Add salt pork, onion, garlic, and celery.
Cook over low heat until vegetables are soft, stirring frequently.
Add remaining ingredients except macaroni and cheese.
Cook over low heat for 10 minutes.
Bring to a boil, add macaroni, and cook until macaroni is soft.
Serve with cheese.
