Hot Minestrone Recipe
Ingredients
| 2 tablespoons/60 g/2 oz butter | ||
| Garlic | 2 Clove (5gm), crushed | |
| Onions | 2 Small, finely chopped | |
| Bacon rashers | 4 , chopped | |
| 250 g/8 oz bacon bones | ||
| 150 g/4 1/2 oz red kidney beans | ||
| 100 g/3 1/2 oz haricot beans, soaked overnight | ||
| 1/2 small cabbage, roughly chopped | ||
| 100 g/3 1/2 oz spinach, washed and chopped | ||
| 3 medium-sized potatoes, peeled and chopped | ||
| 2 medium-sized carrots, peeled and diced | ||
| Frozen peas | 150 Gram, shelled | |
| Stalk celery | 1 , chopped | |
| Parsley | 2 Tablespoon, finely chopped | |
| 2 litres/3 1/2 pt chicken stock | ||
| Salt | To Taste | |
| 100 g/3 1/2 oz tomato and cheese tortellini | ||
| 50 g/2 oz pasta of your choice | ||
| Fresh Parmesan cheese | ||
Directions
1. Heat butter and add garlic, onion, bacon and bones. Saute 4-5 minutes. 2. Add all other ingredients except pasta and bring to the boil. Allow to simmer covered for approximately 90 minutes.
3. Remove and discard bacon bones.
4. Stir in both pastas and cook until al dente.
