Parmesan Minestrone Recipe
Ingredients
| Oil | 1/2 Cup (16 tbs) | |
| Butter | 60 Gram | |
| 2 onions, peeled and chopped | ||
| Carrots | 3 , finely chopped | |
| 1 potato, peeled and chopped | ||
| Celery stick | 3 , chopped | |
| Zucchinis | 2 , chopped | |
| Cabbage | 1/4 , shredded | |
| Beef Stock | 3 Cup (16 tbs) | |
| 2 x 400g cans peeled tomatoes | ||
| Salt and pepper parmesan cheese | ||
Directions
1. Combine oil, butter and onion. Cook for 2-3 minutes on high.
2. Add carrots and potato. Cover and cook for 5 minutes on high.
3. Add celery, zucchini and cabbage. Cover and cook for 3 minutes on high. Add stock, undrained tomatoes, salt and pepper. Cook, covered, for 15-20 minutes on high, stirring occasionally.
