Minestrone Recipe

1/3 cup olive or salad oil
4 tablespoons butter or margarine
1 large onion, diced
2 large carrots, diced
2 large celery stalks, diced
2 medium-sized potatoes, diced
1/2 pound green beans, cut into 1-inch pieces
6 cups water
1/2 small head green cabbage, thinly sliced
1 14 1/2- to 16-ounce can tomatoes
1/2 10-ounce bag spinach, coarsely sliced
2 medium-sized zucchini, diced
6 beef-flavor bouillon cubes or envelopes
1 teaspoon salt
1 15- to 19-ounce can white kidney beans (cannellini), drained
1 15 1/4- to 19-ounce can red kidney beans, drained
1/2 cup grated Parmesan or Romano cheese
Directions
1. In 8-quart Dutch oven or saucepot over high heat, in hot oil and butter or margarine, cook onion, carrots, celery, potatoes, and green beans until lightly browned.
2. Add water, cabbage, tomatoes with their liquid, spinach, zucchini, bouillon, and salt; heat to boiling. Reduce heat to low; cover and simmer 40 minutes or until vegetables are tender.
3. Stir in beans; cook 15 minutes. Sprinkle each serving with some cheese.
