Pork Minestrone Recipe
For those of you who have a fascination for Minestrone, here is the perfect one to please you. Obviously there is nothing better than a good Minestrone soup. Excellent!

1/4 pound salt pork, diced
1 onion, sliced
1 clove garlic, minced
6 cups light stock or broth
2 carrots, diced
2 stalks celery, diced
1/4 head cabbage, shredded
4 tomatoes, diced
1 zucchini, sliced
1 can garbanzo beans, drained
1 can kidney beans, drained
1 cup macaroni or vermicelli
Salt and pepper to taste
1 tablespoon parsley, chopped
2 tablespoons olive oil
Parmesan cheese
Directions
In a skillet, saute the salt pork until browned.
Stir in the onion and garlic, and continue cooking until onion is golden.
Place in the crock with the remaining ingredients except macaroni, seasoning, parsley, oil, and cheese.
Cook on Low for 6 to 8 hours.
Add macaroni, and salt and pepper.
Turn heat to High, and cook for 30 minutes or until the macaroni is tender.
At serving time, stir in the parsley and oil.
Top each bowl with a sprinkling of Parmesan cheese
