 Celery1 Cup (16 tbs), diced

 Parsley1 Teaspoon, finely chopped
 Green pepper/Red pepper1⁄2 Teaspoon, minced
 Cabbage1 Cup (16 tbs), finely shredded
 Soaked haricot beans4 Ounce
 Green peas2 Ounce, soaked
 Grated cheese2 Ounce
 Boiling water2 Quart
 Oil2 Tablespoon
For parsley crackers
 Fresh butter2 Tablespoon, beaten until fluffy
 Finely chopped parsley2 Tablespoon

1. In a saucepan, heat oil.
2. Add onions and garlic and cook over a medium flame for 5 minutes.
3. Add the remaining fresh vegetables except the parsley and cook for a further five minutes.
4. Add boiling water, soaked beans and peas.
5. Cook over a medium flame.
6. Season to taste. Cook until the beans turn soft for about 2-3 hours.

7. Serve Minestra Soup topped with parsley and grated cheese. You can even serve with Parsley crackers.
To prepare parsley crackers, beat 2 tablespoons fresh butter till it becomes fluffy. Add two tablespoons finely chopped parsley. Spread on cracker biscuits and grill it in the oven until the surface bubbles and colours.
