Mincemeat-Stuffed Baked Apples Recipe

Ingredients
3/4 cup mincemeat
1/2 cup chopped walnuts
6 large baking apples
6 tsp. butter
6 tsp. sugar
1 cup brown sugar, packed
2 cups water
3 tbsp. butter
1/4 tsp. cinnamon
1/4 cup orange marmalade
2 tbsp. cold water
2 tbsp. cornstarch
Directions
Heat oven to 375 degrees.
Combine mincemeat and walnuts.
Core apples and peel 1/3 of the way down from the top.
Set in baking dish and fill with mincemeat mixture.
Top each apple with 1 tsp. butter and sprinkle peeled part with 1 tsp. sugar.
Boil brown sugar, water, 3 tbsp. butter and cinnamon in small saucepan 5 minutes.
Pour into bottom of baking pan so it surrounds apples.
Bake about 40 minutes or until apples are tender.
Lift apples out of pan with slotted spoon.
Pour liquid in baking pan into a saucepan and add orange marmalade.
Heat to boiling.
Measure cold water into small dish and add cornstarch.
Stir until smooth and add to boiling mixture gradually, stirring constantly.
Bring to boiling and boil 1 minute.
Return apples to baking dish.
Pour sauce over.
Put low under the broiler (middle of the oven) and broil until apples are glazed (about 3 minutes) spooning sauce over apples several times.
Serve warm.
