Mincemeat Steamed Pudding Recipe

Ingredients
2 tablespoons margarine or butter, softened
1/2 cup packed brown sugar
2 eggs
1 cup prepared mincemeat
1/3 cup milk
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup chopped nuts
Rum Sauce
Directions
Grease round baking dish, 8 x 1 1/2 inches.
Place straight sided beverage glass or custard cup open end up in center of baking dish.
Mix mar garine, brown sugar and eggs.
Stir in mince meat and milk.
Mix in flour, baking powder and nuts.
Spoon batter around glass in baking dish.
Cover tightly with tent of plastic wrap and microwave until cake around glass is no longer doughy, 5 to 6 minutes, rotating dish every 2 minutes.
Cool 5 minutes.
Uncover and twist glass out; invert pudding onto serving plate.
Serve warm with Rum Sauce.
