Ingredients
7 pounds ground beef
10 pounds apples, peeled, cored, ground
5 pounds sugar
2 pounds seedless raisins
3 tablespoons (heaping) cinnamon
2 teaspoons nutmeg
2 teaspoons ground cloves
1 1/2 teaspoons salt
1 1/2 quarts apple cider
3/4 cup plus 2 tablespoons vinegar
2 tablespoons whiskey
1 fifth of apricot or peach brandy
Directions
Brown the ground beef in a skillet, stirring until crumbly; drain.
Combine the ground beef, apples, sugar and raisins in a large kettle; mix well.
Stir in a mixture of the cinnamon, nutmeg, cloves and salt.
Stir in the remaining ingredients.
Simmer, partially covered, for about 2 hours, stirring occasionally.
Divide among 8 containers or plastic bags.
Freeze until ready to use.
To bake a pie, fill a 9-inch double-layer pie crust with mincemeat and bake at 350 degrees for 45 to 55 minutes or until hot and browned.
