Ingredients

 Butter/Margarine7 Tablespoon
 Brown sugar1/2 Cup (16 tbs), firmly packed
 Rum extract1/4 Teaspoon
 Enriched flour1 1/4 Cup (16 tbs), sifted
 Salt1/4 Teaspoon
 Baking soda1/4 Teaspoon
 1/2 cup instant or regular whole wheat cereal
 Mincemeat1 Cup (16 tbs), prepared

Directions

Heat oven to moderate (350° F.).
Butter an 8-inch square pan.
Cream butter and sugar.
Add extract.
Sift together flour, salt and soda.
Stir in cereal.
Add to creamed mixture.
Mix well to form crumbs.
Pack 1/2 of crumb mixture in bottom of pan.
Spread with mincemeat.
Sprinkle remaining crumb mixture over top.
Pat lightly.
Bake 20 minutes or until lightly browned.
Cut into 12 bars.
Remove from pan.
Heat bars before serving.
Serve with hard sauce or ice cream.
