Mincemeat Pecan Pie Recipe
Ingredients
| Mincemeat package | 1 , condensed | |
| 1/2 cup Karo light or dark corn syrup | ||
| Margarine | 1/4 Cup (16 tbs) | |
| 3 eggs, slightly beaten | ||
| Pecans | 1/2 Cup (16 tbs), coarsely chopped | |
| Orange rind | 1 Tablespoon, grated | |
| 1 unbaked (9-inch) pastry shell | ||
| Sherry | 1/4 Cup (16 tbs) | |
Directions
In mediumsaucepan stir together first3 ingredients.
Stirring constantly, bring to boil over mediumheat.
Remove from heat.
Gradually stir into eggs.
Add pecans and rind.
Pour into pastry shell.
Bake in 350-degree oven for 40-50 minutes, or until knife inserted near center comes out clean.
Pour sherry overfilling.
Cool.
