Mincemeat Mambos (Mincemeat Drop Cookies) Recipe
Ingredients
| All purpose flour | 3 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1 Teaspoon | |
| 1 cup soft butter or margarine | ||
| Brown sugar | 2 Cup (16 tbs), firmly packed | |
| Eggs | 2 | |
| Bran | 1 Cup (16 tbs) | |
| 1 teaspoon vanilla flavoring | ||
| Mincemeat | 2 Cup (16 tbs), prepared | |
Directions
1. Sift together flour, baking powder and salt. Set aside.
2. Beat butter and sugar until light and fluffy; add eggs and beat well. Stir in All-Bran, vanilla and mincemeat. Add sifted dry ingredients; mix well. Drop by tablespoonfuls onto greased baking sheets.
3. Bake in moderately hot oven (400° F.) about 15 minutes or until done.
