Mincemeat Lite Recipe

Ingredients
2 1/2 pounds meaty veal breast or 1 1/4 pounds stewing veal
2 cups apple cider or apple juice
2 cups golden raisins
1/2 cup honey
Juice of 1 lemon
Grated rind of 1 lemon (about 1 tablespoon)
2 tablespoons cider vinegar
2 teaspoons ground cinnamon
2 teaspoons ground allspice
Directions
In a large pot, cover veal with water, bring to a boil, and simmer for 1 1/2 hours, or until very tender (or cook in a pressure cooker for 25 minutes).
Drain, cool, and finely chop meat, discarding fat, gristle, and bone. (Save liquid for the stock pot.) You should have about 2 cups meat.
In the same pot, combine meat with remaining ingredients, and simmer, uncovered, over low heat for 45 to 60 minutes, stirring occasionally.
Mixture should be quite thick.
