Ingredients

 Beef pork1 1/2 Pound
 Raisins1 Cup (16 tbs)
 Applesauce1 Cup (16 tbs)
 Sugar3/4 Cup (16 tbs)
 1/2 cup dark syrup or light molasses
 Coriander seed1/2 Teaspoon, crushed
 Cloves4 Teaspoon
 Salt1 Teaspoon
 4 cups pinnons, shelled walnuts or almonds
 1/4 cup dry sherry or brandy

Directions

1 Simmer the meat in water to cover until tender. Grind or puree in an electric blender.
2 Add remaining ingredients and mix well. The filling should be thick and moist.
3 If it seems dry, add more liquid. Let it rest for several hours to blend flavors, then use for filling.
