Ingredients

 PASTRY
 All purpose flour2 1/3 Cup (16 tbs)
 Cinnamon1 Teaspoon
 Salt To Taste
 Butter3/4 Cup (16 tbs)
 Granulated Sugar1/2 Cup (16 tbs)
 1 egg, lightly beaten
 MINCEMEAT
 Mixed dried fruit1 1/2 Cup (16 tbs)
 Crushed pineapple2 Cup (16 tbs), canned
 1 cooking apple, peeled, cored and grated
 Brown sugar1 Cup (16 tbs)
 Nutmeg1 Teaspoon
 Pineapple juice1 Tablespoon, blended

Directions

Sift flour, cinnamon and salt into a bowl.
Work in butter until mixture resembles breadcrumbs.
Stir in sugar and egg to form dough.
Knead lightly then wrap in plastic and refrigerate 1 hour.
Grate half the dough over base of 12 x 8 inch (30 x 20 cm) pan.
Press down lightly and evenly with the back of a spoon.
Set aside.
Preheat oven to 350°F (180°C).
Mincemeat Place mixed fruit, pineapple and juice, apple, sugar and nutmeg in saucepan.
Add cornstarch paste and simmer until thickened.
Cool slightly.
Spread mincemeat over pastry base.
Grate remaining dough over top to completely cover mincemeat.
Bake 35-40 minutes or until golden brown.
Cool on wire rack.
Cut into bars.
