Mincemeat Coffee Cake Recipe

Ingredients
1/2 cup (1/4 pound) butter
1 cup sugar
2 eggs, well beaten
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon lemon extract
7/8 cup milk (1 cup, less 2 tablespoons)
1 cup mincemeat
1/4 cup chopped walnut meats
2 tablespoons melted butter
2 tablespoons brown sugar
1 teaspoon cinnamon
Directions
Cream butter and sugar together; stir in well beaten eggs.
Sift flour, measure, then sift again with baking powder and salt.
Add lemon extract to milk, and stir into creamed mixture alternately with dry ingredients.
Combine mincemeat and nut meats.
Spread 2/3 of batter in greased 8-inch spring form pan.
Dot with 2/3 of the mincemeat mixture, distributing it over the batter by the teaspoonful.
Cover with remaining batter and dot with rest of mincemeat.
Sprinkle with melted butter, brown sugar, and cinnamon.
Bake in a moderate oven (350°) for 45 minutes.
