Ginger-Flavored Mincemeat Recipe
Ingredients
| Apples | 1 Pound, finely chopped | |
| 1 lb. currants, cleaned and picked | ||
| Beef suet | 1 Pound, finely chopped | |
| 1 lb. large raisins, stoned and quartered | ||
| Sultanas | 1/2 Pound, halved | |
| 1 lb. demerara sugar | ||
| Blanched almonds | 2 Ounce, finely chopped | |
| 1/2 gill rum | ||
| 2 oz. each candied lemon, orange and citron peel, all finely chopped | ||
| Grated rind and juice of 2 large lemons | ||
| Nutmeg | 1/2 , finely grated | |
| 1/2 level teasp. each ground cloves and cinnamon | ||
| 1/2 teasp. each ground mace and ginger | ||
| Salt | 1/2 Teaspoon (Leveled) | |
| Brandy | 1/2 Pint | |
Directions
Mix all the prepared ingredients together, stirring well, and cover closely in clean dry jars.
Keep for 2 or 3 weeks to allow to mellow before using.
