Mincemeat Recipe
Ingredients
| 125 g/4 oz raisins | ||
| 125 g/4 oz currants | ||
| 125 g/4 oz grated apple | ||
| 125 g/4 oz brown sugar | ||
| 125 g/4 oz sultanas | ||
| Grated rind and juice of 1 lemon and 1 orange | ||
| 60 g/2 oz suet (optional) | ||
| 60 g/2 oz chopped mixed peel | ||
| 30 g/1 oz blanched almonds, chopped | ||
| Mixed spice | 1 Teaspoon | |
| 2-3 tbls rum or brandy | ||
Directions
Mince all the fruits together with the nuts, then stir in the remaining ingredients.
Leave covered in a cool place for several days, turning from time to time.
Pack into clean jars and cover with waxed discs or circles of greaseproof paper.
Store in a cool place if you include the suet; without suet it is best kept in the refrigerator.
