Mincemeat Recipe
Mincemeat is something really worth making, trust me on that. Beef is the primary ingredient in Mincemeat. Serve this tasty Side Dish as often as you like! Treat your family to this Mincemeat and they are going to adore you for it.
Ingredients
2 pounds lean beef, ground
1 pound beef suet, ground
3 quarts chopped tart apples
3 cups brown sugar, packed
1 cup molasses
1 quart cider
1 1/2 pounds currants, washed
2 pounds raisins
1/2 pound citron, thinly sliced
Juice and peel of 1 orange, ground
Juice and peel of 1 lemon, ground
1 1/2 teaspoons each cinnamon, mace, cloves, nutmeg, allspice and salt
1 pound broken nut meats (optional)
1 pint cognac
Directions
1. Mix the beef, suet, apples, sugar, molasses, cider, fruits and peels in a large, heavy kettle. Bring to a boil, lower the heat and simmer, stirring frequently, about one and one-half hours.
2. Add the spices and continue cooking until thick, stirring almost constantly. Add the nuts and cognac and pack into sterile jars. Adjust lids and process either pints or quarts one and one-half hours in boiling water bath or twenty minutes at ten pounds pressure in pressure canner. Seal.
