Ingredients

 Salad oil1/4 Cup (16 tbs)
 2 large cloves garlic, minced or pressed
 Grated ginger1 Teaspoon
 Red pepper flakes1/2 Teaspoon, crushed
 Ground turkey1 pound
 1 1/2 pounds chicken breasts, skinned, boned, and minced
 1 can about 8 oz. bamboo shoots, drained and minced
 1 can about 8 oz. water chestnuts, drained and minced
 Mushrooms1/4 pound, minced
 4 green onions including tops, minced
 Frozen peas1/2 Cup (16 tbs)
 Hoisin sauce
 Butter lettuce or romaine leaves, rinsed and
 Crisped
 2 green onions green part only, cut into 1 1/2-inch lengths

Directions

Prepare Cooking Sauce and set aside.
Heat 2 tablespoons of the oil in a wok or wide frying pan over high heat.
Add garlic, ginger, and red pepper flakes and stir once.
Add turkey and cook, stirring to break up large chunks, until no longer pink about 3 minutes; remove from pan and set aside.
Heat remaining 2 tablespoons oil in pan.
Add bamboo shoots, water chestnuts, mushrooms, and minced onions; cook, stirring, for 2 minutes.
Return turkey to pan, then add peas.
Stir Cooking Sauce, pour into pan, and stir until sauce boils and thickens.
