Minced Pork Omelette Recipe

Ingredients
Marinade:
1 teaspoon minced fresh ginger root
1 teaspoon rice wine or dry sherry
1/4 teaspoon pepper
1/2 teaspoon cornstarch
1 tablespoon soy sauce
1/3 lb. ground pork
4 eggs
1/4 teaspoon salt
5 tablespoons vegetable oil
2 tablespoons chopped green onion
Directions
Combine marinade ingredients in a medium bowl.
Add ground pork.
Mix well and set aside.
Beat eggs until pale.
Beat in salt.
Heat oil in a wok over medium-high heat 1 minute.
Stir-fry pork mixture about 2 minutes until pork is browned.
Add green onion.
Stir-fry 1 minute longer.
Rotate wok to coat evenly with oil and add eggs all at once.
Stir once to mix pork with eggs, then let eggs set.
Cook 2 to 3 minutes until bottom of omelet is golden.
Turn with a spatula.
If necessary for easy turning, sprinkle 1 tablespoon oil on wok around edges of omelet.
Cook 2 minutes longer until eggs are set and both sides are golden.
