Ingredients
Butter - 3 tablespoons
Fresh coconut - 1/2 cup, grated (or use 1/2 cup flaked coconut)
Onions - 3/4 cup, chopped
Fish fillets - 2 pounds, ground or chopped fine
Eggs - 2
Cashew nuts - 3 tablespoons, ground
Salt - 1 1/2 teaspoons
Curry powder - 1 tablespoon
Garlic clove - 1, minced
Coconut milk - 3/4 cup
Directions
GETTING READY
1) Preheat the oven to 350 degrees.
MAKING
2) In a skillet, melt half of the butter.
3) In this, lightly brown the coconut.
4) Remove and keep aside.
5) In the same skillet, melt the remaining butter.
6) In this, lightly brown the onions.
7) To the chopped fish, blend in the eggs, nuts, salt, curry powder, garlic, coconut milk, the sauteed coconut, and onions.
8) Chop the ingredients until they are smooth and fine.
9) On eight 8-inch squares of aluminum foil or parchment paper, lightly spread oil.
10) Among the papers, divide the mixture evenly.
11) Fold up the papers like an envelope and press edges together.
