Mince Loaf Cake Recipe

3 cups all purpose flour
 
3 1/2 teaspoons baking powder
 
1 teaspoon salt
 
1/4 teaspoon baking soda
 
3/4 cup firmly packed brown sugar
 
1 1/2 cups chopped walnuts
 
2 eggs
 
1/2 cup milk
 
1/3 cup vegetable oil
 
1 cup prepared mincemeat

Directions

1. Sift flour, baking powder, salt and soda into a large bowl; stir in brown sugar and walnuts.
2. Beat eggs well in a small bowl with a wire whip; stir in milk, vegetable oil and mincemeat. Add all at once to flour mixture; stir just until evenly moist. Spoon into a greased 9x5x3-inch loaf pan; spread top evenly.
3. Bake in moderate oven (350°) 1 hour, or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Loosen around edges with a knife; turn out onto rack. Cool completely.
4. Wrap loaf in wax paper, foil or transparent wrap. Store overnight to mellow flavors.
