Mince Coffee Circle Recipe
Ingredients
2 cups sifted all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup shortening
1 slightly-beaten egg
1/2 cup milk
3/4 cup moist mincemeat
Confectioners' Icing
Directions
Sift dry ingredients together.
Cut in the shortening till the mixture resembles coarse oatmeal.
Combine egg, milk, and mincemeat.
Add to dry ingredients, mixing just until the flour is moistened.
Spoon the mixture into a well-greased 9-inch ring mold, filling it 2/3 full.
Bake in a moderate oven (375°) for 25 to 30 minutes.
Frost with Confectioners' Icing while warm but not hot: Combine 2 tablespoons butter with 1 cup sifted confectioners' sugar.
Add just enough cream to make mixture of a spreading consistency.
Add a dash salt.
Mix thoroughly.
Drizzle atop the warm coffee circle.
If desired, trim top with candied red and green cherries and pecan halves.
